Halloween Treats Spooky Spider Tofu Cupcakes

These scary-good Halloween treats requires less than 30 mins of prep time and you can make them in less than an hour! Decorate your spooky spider cupcakes with black licorice laces, chocolate sprinkles and cinnamon hearts. These will be the best spiders you’ve ever eaten!
So you are probably thinking, “boxed cake mix?! How is that healthy??” The boxed mix calls for oil and eggs however tofu is the substitute, adding more protein and making these moist and delicious without the extra calories or cholesterol worry. And, they are vegan!
Tofu Cupcakes
1 box Duncan Hines Moist Deluxe – Any flavor
1 block of tofu, silken texture
1/4 cup water as needed
– Preheat oven to 350F
– Mix tofu (and water from package) on medium until smooth, adding in cake mix in portions until blended.
– Add up to 1/4 cup water if needed, depending on how dense you want your cupcakes.
– Pour mixture info cupcake tin and follow directions on box to bake.
Vegan Butter Cream Frosting
1/2 cup nondairy, non-hydrogenated butter (such as Earth Balance), at room temperature
3 cups confectioners’ sugar
1 1/2 teaspoons vanilla extract
2 tablespoons nondairy milk (soy, rice, almond, hazelnut, hemp, or oat) or water
Black food color
To make the frosting, with an electric hand or stand mixer, cream butter until it is smooth and begins to fluff. With the mixer on low speed, add confectioners’ sugar and fluff for another few minutes. Add vanilla, milk and food coloring.
Once all ingredients are well-combined, beat on high until frosting is light and fluffy, 3 to 4 minutes. Add 1 or 2 tablespoons more milk to achieve the right consistency. Cover the icing with plastic wrap to prevent it from drying out until ready to use. Rewhip before using.
